Changing Bachmann turnout control switch

I have an N scale layout using Bachmann EZ track and want to build a control panel. Can I replace the switches that come with the turnouts to DPDT momentary switches?

Center wire of 3 wire green cord to turnout switch is the common.

Short answer is yes. Unless you are going to use the extra contacts to control pairs of switches, or relays for signal control, you could use SPDT Momentary contact toggles and save a little money.
