How to remap sound functions in Bachmann ez command system

I have a Broadway limited rolling thunder emd sd40-2 paragon 3 sound engine. Am running on an ez command system. How would I actually map the CV values into one of the numerical buttons - the instructions don't say how. It just says it can be done.

EZ Command does not allow changing CV values, only the Dynamis does. The manual last I saw says you can program the engine number.
